Instructions:
- Finely chop the shrimp and place them in a large mixing bowl.
- Add the cream cheese, shredded cheddar cheese, chopped green onions, Cajun seasoning, garlic powder, smoked paprika, black pepper, egg, breadcrumbs, and crushed crackers.
- Mix the ingredients thoroughly until the mixture is well combined and holds together.
- Shape the mixture into small bite-sized balls using your hands or a small scoop.
- Roll each ball lightly in all-purpose flour, ensuring it is evenly coated.
- Dip the floured balls into the beaten eggs.
- Roll them in seasoned breadcrumbs to create a crisp outer coating.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Fry the shrimp bites in batches for about 3–4 minutes, or until they are golden brown and crispy.
- Remove the bites with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- In a small bowl, combine mayonnaise, hot sauce, Cajun seasoning, honey, and garlic powder to make the dipping sauce.
- Serve the Bayou Gremlin Bites hot with the spicy bayou dipping sauce.
Variations
- Add finely diced jalapeños to the shrimp mixture for extra heat.
- Substitute pepper jack cheese for cheddar to enhance the spicy flavor.
- Use panko breadcrumbs instead of regular breadcrumbs for an extra crispy coating.
- Bake the bites at 400°F (200°C) for about 15–18 minutes for a lighter alternative to frying.
- Replace shrimp with finely chopped crab meat for a crab-based variation.
Tips
- Make sure the shrimp are finely chopped so the mixture binds well and forms smooth bite-sized balls.
- Chilling the formed bites for 15–20 minutes before breading can help them hold their shape during frying.
- Fry in small batches to prevent overcrowding and maintain the oil temperature.
- Use a thermometer to keep the oil close to 350°F for the best crisp texture.
- For deeper flavor, add a splash of Worcestershire sauce to the shrimp mixture before forming the bites.
