Bayou Gremlin Bites

Instructions:

  1. Finely chop the shrimp and place them in a large mixing bowl.
  2. Add the cream cheese, shredded cheddar cheese, chopped green onions, Cajun seasoning, garlic powder, smoked paprika, black pepper, egg, breadcrumbs, and crushed crackers.
  3. Mix the ingredients thoroughly until the mixture is well combined and holds together.
  4. Shape the mixture into small bite-sized balls using your hands or a small scoop.
  5. Roll each ball lightly in all-purpose flour, ensuring it is evenly coated.
  6. Dip the floured balls into the beaten eggs.
  7. Roll them in seasoned breadcrumbs to create a crisp outer coating.
  8. Heat oil in a deep skillet or fryer to 350°F (175°C).
  9. Fry the shrimp bites in batches for about 3–4 minutes, or until they are golden brown and crispy.
  10. Remove the bites with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  11. In a small bowl, combine mayonnaise, hot sauce, Cajun seasoning, honey, and garlic powder to make the dipping sauce.
  12. Serve the Bayou Gremlin Bites hot with the spicy bayou dipping sauce.
