Instructions:

  1. In a small saucepan, warm the olive oil over low heat until it becomes gently hot but not smoking.
  2. Add the minced garlic, red pepper flakes, chili flakes, oregano, paprika, and salt. Allow the mixture to warm for about 2–3 minutes so the oil absorbs the flavors of the spices.
  3. Remove the saucepan from heat and stir in the white vinegar or lemon juice to add brightness to the marinade.
  4. Place the mozzarella pearls into a clean glass jar or airtight container.
  5. Pour the warm chili oil mixture over the mozzarella balls until they are completely covered.
  6. Add the chopped parsley and gently stir or shake the container to distribute the herbs and spices evenly.
  7. Allow the mixture to cool completely, then refrigerate and marinate for at least 2 hours. Overnight marinating will create deeper flavor.
  8. Serve chilled or at room temperature with toothpicks as an appetizer or snack.
