Instructions:
- Add the chopped apples, sugar, apple cider vinegar, and minced chili peppers to a saucepan over medium heat.
- Bring the mixture to a gentle simmer, stirring occasionally, and cook for 10 to 12 minutes until the apples soften.
- Stir in the cinnamon, cloves if using, and lemon juice.
- Add the fruit pectin and bring the mixture to a rolling boil, stirring constantly, for 1 to 2 minutes.
- Reduce the heat and continue simmering for 10 to 15 minutes, stirring often, until thick and jam-like.
- Remove from heat and allow the jam to cool slightly. It will thicken more as it cools.
- Transfer to clean jars and refrigerate, or process for shelf storage if desired.
