Apple–Chipotle Smoky Pepper Jam

Instructions:

  1. In a medium saucepan over medium heat, combine the apples, red bell pepper, sugar, apple cider vinegar, lemon juice, and salt.
  2. Bring the mixture to a gentle boil, stirring until the sugar is fully dissolved.
  3. Reduce the heat to medium-low and simmer for about 20 minutes, stirring occasionally, until the apples are soft.
  4. Stir in the chipotle peppers, adobo sauce, smoked paprika, and cinnamon.
  5. Continue simmering for 10 to 15 minutes, until the mixture thickens and becomes glossy and jam-like.
  6. Lightly mash with a spoon or potato masher for a smoother texture, or leave chunky if preferred.
  7. Remove from heat and allow the jam to cool. It will thicken further as it sets.
  8. Transfer to a sealed jar and store in the refrigerator for up to two weeks.

  • Substitute pears for apples for a softer, floral flavor.
  • Increase chipotle or adobo sauce for extra heat.
  • Add finely diced jalapeño for fresh pepper bite.
