Instructions:
- In a medium saucepan over medium heat, combine the apples, red bell pepper, sugar, apple cider vinegar, lemon juice, and salt.
- Bring the mixture to a gentle boil, stirring until the sugar is fully dissolved.
- Reduce the heat to medium-low and simmer for about 20 minutes, stirring occasionally, until the apples are soft.
- Stir in the chipotle peppers, adobo sauce, smoked paprika, and cinnamon.
- Continue simmering for 10 to 15 minutes, until the mixture thickens and becomes glossy and jam-like.
- Lightly mash with a spoon or potato masher for a smoother texture, or leave chunky if preferred.
- Remove from heat and allow the jam to cool. It will thicken further as it sets.
- Transfer to a sealed jar and store in the refrigerator for up to two weeks.
