Instructions:
- Preheat the oven to 325°F (165°C).
- In a medium bowl, whisk together the eggs, sugar, salt, and vanilla until smooth but not foamy.
- Warm the milk slightly, being careful not to boil it. Slowly whisk the warm milk into the egg mixture.
- Pour the custard into buttered oven-safe ramekins or a small baking dish.
- Lightly sprinkle the tops with nutmeg or cinnamon.
- Place the ramekins or dish into a larger pan and add hot water halfway up the sides to create a water bath.
- Bake for 40 to 45 minutes, until the custard is set around the edges but slightly jiggly in the center.
- Remove from the oven, cool slightly, and dust with powdered sugar if desired. Serve warm.
