Colorado Style Green Chili is a bold, hearty stew that captures the spirit of the Rocky Mountains in every spoonful. Tender cubes of pork simmer slowly with roasted green chiles, potatoes, and warm spices in a savory, slightly thickened broth that’s both comforting and deeply flavorful.
Unlike thinner Southwestern chile verde, Colorado green chili is known for its rich body and stew-like consistency. The flour coating on the pork helps build that signature texture, while long, gentle simmering allows the flavors to fully develop and meld together.
Roasted Hatch green chiles are the heart of this dish. Their smoky, earthy heat defines the character of the chili, giving it depth without overwhelming spice. Combined with tender potatoes and succulent pork shoulder, the result is filling and satisfying.
