Instructions:
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef until fully browned. Drain excess grease and season lightly with salt and pepper.
- Spread a thin layer of enchilada sauce over the bottom of a baking dish.
- Fill each tortilla with cooked beef, roll tightly, and place seam-side down in the dish.
- Pour the remaining enchilada sauce evenly over the rolled tortillas.
- Sprinkle the shredded cheese generously over the top.
- Bake uncovered for 20 to 25 minutes, until the cheese is melted, bubbly, and lightly golden.
- Let the enchiladas rest for 5 minutes before serving.
